Somethin's Fishy!

We had fish tacos tonight--I've been slowly tweaking to find the perfect recipe (I am soooo NOT a fish lover!  But these, good gravy...hold the phone...stop the presses!!!  Amazing!!!)

Sorry, no more pics than this...dinner was late, kids were staaaaarving and they were So good they just disappeared!  ok...honesty check...2 of the kiddos wouldn't eat them...even the one who could eat his weight in fish sticks!!!!   Jim piled on so much tarter sauce that I doubt he even tasted the fish :/   Riley inhaled 3 pieces, so I feel redeemed!   


So, here's the scoop:


we used Mahi Mahi (I think it was a pound...)


marinade in:
1 Tbs red wine vinegar
2Tbs Tequilla
2 limes, juiced
1 tsp salt
1 tsp pepper
2 tsp cumin
1 jalapeno, finely chopped
a handful of cilantro, finely chopped


Mix all together, pour over fish..or chicken (this is also our fajita recipe!).   Let sit for 30-ish min....whatever works for you.  If you're lucky enough to have a grill basket for the fish, GRILL it!  We don't  so I just drizzled a bit of olive oil in a pan on med high heat and cooked those little babies up!


flake the fish, layer, and enjoy the most kick butt taco Ever!   Or...if you're partaking from carbs/grains...put your filet on a plate and top with some awesome pico!!!!  Delish!!!!  (can I use any more exclamation points?!?)

Love ya Shelly but have to say I;m sure glad I wasn't invited to supper the night of Fish Tacos. More power to ya tho!
