I got this recipe over at Pioneer Woman, Sea Salt Chocolate Truffles. I skipped the sea salt and added a smidge over a 1/4 tsp of peppermint extract. Her instructions are awesome so head on over there and then come back!
Melt 8 oz each of semi and bittersweet chocolate (I used Ghiradelli chips)...over a double boiler or a big pot and a Pfaltzcraft bowl.
Add a can of sweetened condensed milk.
Let it melt and then add 1 Tbs vanilla and 1/4 tsp peppermint (or raspberry or a little Starbucks Via...ooohhh Doggie!)
Let it set over night and then roll into 1/2" balls.Melt up some almond bark, more chocolate chips, white chocolate chips, roll in sprinkles, cocoa powder, nuts...whatever you want! I dipped mine in chocolate and then sprinkled crushed candy canes on top.....YUM!
